Description
"Borrego Serra da Estrela" are refrigerated carcasses, obtained from animals of the Bordaleira Serra da Estrela breed, children of father and mother listed in the breed's herd book. Animal slaughter is done up to 30 days of age, with one weight live up to 12 kg. It is a particularly tender and flavorful meat, with a very smooth taste, with well-distributed interstitial and subcutaneous fat.
History
The Serra da Estrela lamb – locally also known as canasta lamb because it was so small that it was taken in baskets to be sold in local markets – has its history closely linked to the region's pastoralism and the production of Serra da Estrela cheese. In fact, lamb is considered almost a by-product, being taken from the mother and sold at a very young age to prevent her from suckling milk, as this is an important raw material for the production of Serra da Estrela cheese.
